 I must addmit that I had plenty of fun creating quizzes with AI Tools because it is an engaging way for students to learn a specific topic and have fun at the same time. 

There are a bunch of AIs that may help you to create funny and creative sassesment tasks. The most used ones are, Kahoot and Quizziz but there is one that like a lot and it is Educaplay. All of them are very complete apps and I recommend you to take them into account.
